5 cups spinach leaves, coarsely chopped
3 medium tomatoes, cut into 1/4″ slices
2 small red onions, halved lengthwise and thinly sliced
½ tbsp. extra virgin olive oil
1 ½ tbsp. balsamic vinegar
2 tbsp. water
½ tsp. ground white pepper
2 tbsp. orange juice
1 tbsp. fresh parsley, chopped
- Arrange the spinach on a platter or in a large shallow bowl. Place the tomatoes over the spinach and then arrange the onions over the tomatoes.
- In a small bowl, whisk together the oil, vinegar, water, white pepper, and orange juice until thoroughly blended. Pour the dressing over the vegetables, garnish with parsley and serve.
